planning: meals.

Okay, so I've been slacking. Majorly slacking. I used to be amazing at planning 2 weeks of meals, only going to the grocery store twice a month [yeah!] and being on top of getting dinner on the table. Then I had a baby, who then became mobile, who then decided that he needed to see everything up on the counter or he felt left out...so my "planning" went to the garbage and I haven't even thought of going through the "garbage" to get it back out!
Until this week.
I was reading a fellow bloggers [Carly over at Texas Lovebirds] post about meal planning and it gave me just the right amount of motivation to get my "planning" in gear!

Now that I know how many gallons of whole milk we go through a week with Hudson [hallelujah to me and my check book for no more formula!], I'm ready to be organized once again, only going to the store twice a month, and having dinner ready to go at night! [my grocery stores are not going to know what to do when I don't walk through their doors multiple times a week!]

I created this adorable little Meal Planner [total motivation in itself]
and with a little help from my Pinterest boards
I'm finally doing it again!
[please excuse the quality of these pictures!]

Since I will be planning 2 weeks worth of meals and only one grocery shopping trip in that time, I split my days in half so that I could see the following week as well.

I will take this weekend and compile my 2 weeks worth of meals and snacks & create my grocery list...then I would love to share it with all of you once my master list is complete!

P.S. Don't hesitate to send some simple. healthy, and yummy recipes my way!

Let the planning begin!

  1. That is pretty much what I do. I plan for two weeks at a time and "try" to only go to the store twice a month but yeah... that almost never happens! But, hey, at least we are sticking to our meal plans! :)

  4. This is one of my favorite healthy, summertime snack recipes:

    Black Bean Avocado Salsa:

1 can black beans, drained (or whatever beans you prefer)
1 can shoe peg corn or niblets, drained (optional)
    4-5 green onions, sliced
    1/2 a bushel cilantro
    2 avocados, chopped
    3 tomatoes, chopped
1 package Good Seasons dry Italian dressing, mixed according to directions on back. (Do not use already-prepared dressing.)

*Mix everything together and let chill 2-3 hours, or just enjoy it with chips immediately like I do!

  6. I try meal planning, but it would be so much easier if my husband wasn't so freaking picky. Good luck!

  7. That is an awesome meal planning board! I too only ever do a week of meal planning at a time. I really do hate going to the grocery store every week. So this would be great to get in the habit of doing!
