I've been in the mood for trying some new recipes the past few days, and actually usually the things we have in our house. So I went through the freezer, determined not to go to store again, and found some salmon. I know, I don't know how I didn't know it was in there, but I wanted to use it and use it well. I'm pretty sure I rocked this recipe...and I'm not a huge fish fan...but it was absolutely amazing. I posted a picture on instagram and got a few requests for a recipe...so here you go! You will not be disappointed.
Maple Salmon

Ingredients:
- 1 pound salmon
-1/4 cup maple syrup
-2 tablespoons soy sauce
-1 clove garlic, minced
-1/8 teaspoon ground black pepper
Directions:
- In a small bowl, mix the maple syrup, soy sauce, garlic, and pepper.
- Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes.
- Preheat oven to 400 degrees.
- Place the dish in the oven and bake salmon uncovered 20 minutes, or until easily flaked with a fork.
We topped ours off with boiled carrots and brown rice.

So how did you cook your carrots? I have a bag to get rid of but all the recipes I've tried just don't turn out that great.
