If you have followed this blog, you should know by now that I'm a simple person...or I try to be, especially in my cooking. Before I had H, I was always in kitchen, cooking and baking. Dinner was on the table as soon as Kalob walked in the door. There was always a "side" dish to our main course & We always had leftovers. It was pretty great.
Fast forward 2 years and things have changed a bit. I can't walk in the kitchen without H following me and going first to the step stool, banging on it for me to open it for him so he can stand taller to see whats going on. If I am cooking on the stove, he will run around the house with his hands in the air yelling "HOT HOT" and blowing on his fingers, and if I'm mixing anything he has to help...So when trying to come up with recipes that either quick enough to do without him realizing what's going on, or recipes that don't involve much of "me" in them, it's get a little difficult...that's why I'm all for simplicity.
Pretty sure this recipe qualifies!
Fajitas
[chicke or steak]
Ingredients:
1 green pepper
1 red pepper
1 orange or yellow pepper
1 small onion
1 small onion
2 chicken breasts (of steak if you prefer)
1 packet of McCormicks Fajitas mix
Directions:
Boil and shred chicken. Heat oil in medium skillet. Add sliced peppers and chopped onion. Allow peppers to soften while cooking and then add chicken. Mix Fajita mix with water and mix with chicken and peppers. Wrap in tortillas, add your toppings and enjoy! So Yummy.

Elise, those Fajitas look very very yummy as in mouthwatering & i so wanna pop them in my mouth so they hit my tummy & fill me up :) Great recipe girlie!
